Recreate the iconic deli classic with this hearty and flavor-packed Sprouted Tofu Reuben Sandwich. Savory, umami-rich tofu is marinated and baked (or air-fried!) to crispy perfection, then layered onto toasted sourdough bread. It's piled high with tangy sauerkraut, fresh tomato, and a rich, creamy homemade Thousand Island dressing made from cashews. This sandwich is the ultimate plant-based comfort food, delivering a satisfying and delicious meal that's perfect for lunch or dinner.
Ingredients
Method
- In a shallow bowl, combine Worcestershire sauce, onion powder, garlic powder and nutritional yeast.
- Slice tofu to desired thickness.
- Marinate tofu in Worcestershire marinade for 30 minutes to an hour.
- Bake tofu in air fryer 400 degrees, 15-20 minutes or on sheet pan in oven at 425 degrees, 20-25 minutes. It will get crispier the longer you cook it.
- Mix all 1000 Island Dressing ingredients in a blender or with an immersion blender.
- Build sandwich. Bread, dressing, sauerkraut, tomato, tofu. Serve with French fries.
