Tofu Reuben Sammie

Recreate the iconic deli classic with this hearty and flavor-packed Sprouted Tofu Reuben Sandwich. Savory, umami-rich tofu is marinated and baked (or air-fried!) to crispy perfection, then layered onto toasted sourdough bread. It's piled high with tangy sauerkraut, fresh tomato, and a rich, creamy homemade Thousand Island dressing made from cashews. This sandwich is the ultimate plant-based comfort food, delivering a satisfying and delicious meal that's perfect for lunch or dinner.

Ingredients
  

Reuben
  • Sprouted tofu
  • 1/2 cup Worcestershire sauce
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp nutritional yeast
  • Sourdough bread
  • Sauerkraut
  • Tomato
1000 Island Dressing Ingredients:
  • 1 cup soaked cashews
  • 3 Tbsp ketchup
  • 1 Tbsp dill relish
  • 1 Tbsp white wine vinegar
  • 1 Tbsp maple syrup
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp paprika

Method
 

  1. In a shallow bowl, combine Worcestershire sauce, onion powder, garlic powder and nutritional yeast.
  2. Slice tofu to desired thickness.
  3. Marinate tofu in Worcestershire marinade for 30 minutes to an hour.
  4. Bake tofu in air fryer 400 degrees, 15-20 minutes or on sheet pan in oven at 425 degrees, 20-25 minutes. It will get crispier the longer you cook it.
  5. Mix all 1000 Island Dressing ingredients in a blender or with an immersion blender.
  6. Build sandwich. Bread, dressing, sauerkraut, tomato, tofu. Serve with French fries.
