Peach & Pear Baked Oatmeal Bars
Start your day with these warm and wholesome Peach & Pear Baked Oatmeal Bars. Packed with juicy, ripe fruit and hearty rolled oats, these bars are a perfect make-ahead breakfast or healthy snack. Naturally sweetened with maple syrup and bound together with a simple flax egg, they're both delicious and incredibly easy to prepare. A fantastic option for busy mornings or a satisfying afternoon treat.

- Preheat oven to 350°F. Prep an 8×8 baking dish.
- In a small bowl, mix ground flaxseed with 5 Tbsp water. Let sit 5 min to thicken
- In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, and salt.
- Add in milk, maple syrup, flax egg, and vanilla. Stir until combined press half into baking dish.
- Gently saute diced peach and pear until soft (5-7 minutes).
- Pour mixture into the prepared dish and smooth the top.
- Add remaining oat mixture smoothly on top.
- Bake for 30–35 minutes, until set and golden around the edges.
- Let cool 10 minutes, then cut into bars.
