Peach & Pear Baked Oatmeal Bars

Ingredients
  

  • 1 Tbsp flaxmeal
  • 5 Tbsp water
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 cup plant-based milk
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 2 ripe pears diced small
  • 3 ripe peaches diced small
  • ¼ cup pecans chopped

Method
 

  1. Preheat oven to 350°F. Prep an 8×8 baking dish.
  2. In a small bowl, mix ground flaxseed with 5 Tbsp water. Let sit 5 min to thicken
  3. In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, and salt.
  4. Add in milk, maple syrup, flax egg, and vanilla. Stir until combined press half into baking dish.
  5. Gently saute diced peach and pear until soft (5-7 minutes).
  6. Pour mixture into the prepared dish and smooth the top.
  7. Add remaining oat mixture smoothly on top.
  8. Bake for 30–35 minutes, until set and golden around the edges.
  9. Let cool 10 minutes, then cut into bars.
