Preheat oven to 350°F. Prep an 8x8 baking dish.
In a small bowl, mix ground flaxseed with 5 Tbsp water. Let sit 5 min to thicken
In a large bowl, stir together oats, baking powder, cinnamon, nutmeg, and salt.
Add in milk, maple syrup, flax egg, and vanilla. Stir until combined press half into baking dish.
Gently saute diced peach and pear until soft (5-7 minutes).
Pour mixture into the prepared dish and smooth the top.
Add remaining oat mixture smoothly on top.
Bake for 30–35 minutes, until set and golden around the edges.
Let cool 10 minutes, then cut into bars.
