Date Truffle Treats

These Truffle Treats are a plant-based twist on my favorite childhood candy bar. With dates stuffed with peanut butter and walnuts, dipped in dark chocolate, and rolled in peanuts, you've got a sweet, wholesome indulgence with zero guilt.

Ingredients
  

  • 12 large Medjool dates pitted
  • ¼ cup creamy peanut butter no oil or sugar added
  • 12 walnut halves
  • 1 cup dark chocolate chips dairy-free
  • ¼ cup crushed peanuts

Method
 

  1. Slice each date down one side and remove the pit if needed.
  2. Fill each with about ½ teaspoon of peanut butter and one walnut half. Press gently to close.
  3. Melt dark chocolate in a heat-safe bowl over simmering water or in 15-second microwave bursts.
  4. Roll each date in the melted chocolate until coated, then roll in crushed peanuts.
  5. Place on parchment paper and chill in the fridge or freezer for 20–30 minutes until set.
  6. Store in an airtight container in the refrigerator for up to one week.

Notes

Variations: Dates are incredibly versatile. Roll in white cocoa butter and peppermint candies at Christmas or cinnamon and minced apples at Halloween.
