Method
- Slice each date down one side and remove the pit if needed.
- Fill each with about ½ teaspoon of peanut butter and one walnut half. Press gently to close.
- Melt dark chocolate in a heat-safe bowl over simmering water or in 15-second microwave bursts.
- Roll each date in the melted chocolate until coated, then roll in crushed peanuts.
- Place on parchment paper and chill in the fridge or freezer for 20–30 minutes until set.
- Store in an airtight container in the refrigerator for up to one week.
Notes
Variations: Dates are incredibly versatile. Roll in white cocoa butter and peppermint candies at Christmas or cinnamon and minced apples at Halloween.
