Ingredients
  

  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 cup unsweetened nondairy milk
  • 1/4 cup applesauce
  • 1/2 cup maple syrup optional, for those who dare for sweeter cornbread

Method
 

  1. Preheat oven to 400°F.
  2. In one bowl, mix all dry ingredients.
  3. In another bowl, mix all wet ingredients.
  4. Fold wet ingredients into dry until just combined.
  5. Pour batter into a 9-inch square pan or cast iron skillet.
  6. Bake 10–12 minutes, until set and lightly golden.
  7. Let rest before slicing.

Notes

For a spicy version, add 1/2 cup jalapenos or green chile.
