Lemon Lavender Tea Cookies 

Delicate lemon lavender tea cookies made with almond flour, maple syrup, and fresh zest — light, floral, and perfectly plant-based -- and great for afternoon tea or with morning coffee.

Ingredients
  

Cookies
  • 1 1/2 cup almond flour
  • 1/2 cup oat flour
  • 1 1/2 Tbsp culinary lavender crushed
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Zest of 2 lemons
  • 3 Tbsp fresh lemon juice
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 Tbsp milk as needed.
Glaze
  • 1/2 cup powdered sugar
  • 1 Tbsp milk
  • 1/2 tsp vanilla

Method
 

Cookies
  1. Whisk dry ingredients together.
  2. Mix wet ingredients together.
  3. Pour wet ingredients into the dry ingredients and whisk until just mixed. (Don't overstir). Add milk only if mixture is too dry.
  4. Bake 10-12 minutes.
  5. Let cool before glazing.
  6. They will harden after 5-10 minutes or so. Yields 2 dozen cookies.
Glaze
  1. Mix together and drizzle on cookie.
  2. Sprinkle with lemon zest and lavender buds.

Notes

Culinary lavender should be mashed or ground with a mortal and thistle to release the oils first.
