Method
- In a blender or food processor, blend cashews, milk, and syrup until smooth and creamy.
- Pour mixture into a small saucepan over medium-low heat. Stir constantly for 3–5 minutes until warmed and slightly thickened.
- Stir in cinnamon, salt, and vanilla. Fold in toasted pecans.
- Remove from heat and let rest 5–10 minutes — it will thicken as it cools to a pourable, caramel-style sauce.
Notes
If you want a thinner drizzle for pancakes or waffles, whisk in 1–2 teaspoons of warm plant milk right before serving.
