Ingredients

  • ½ cup pure maple syrup
  • ¼ cup unsweetened plant milk soy, oat, or almond
  • ¼ cup raw cashews soaked 15 minutes in hot water
  • ¼ cup pecans lightly toasted in oven or air fryer
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch salt
  • Optional tiny dash of bourbon extract or nutmeg for flair

Method

  1. In a blender or food processor, blend cashews, milk, and syrup until smooth and creamy.
  2. Pour mixture into a small saucepan over medium-low heat. Stir constantly for 3–5 minutes until warmed and slightly thickened.
  3. Stir in cinnamon, salt, and vanilla. Fold in toasted pecans.
  4. Remove from heat and let rest 5–10 minutes — it will thicken as it cools to a pourable, caramel-style sauce.

Notes

If you want a thinner drizzle for pancakes or waffles, whisk in 1–2 teaspoons of warm plant milk right before serving.
