Ingredients
  

  • 1 1/2 cup oat flour*
  • 6-7 soaked dates pureed
  • 1/4-1/2 cup maple syrup depending on taste
  • 2 tsp vanilla
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1 - 1 1/2 tsp pumpkin spice
  • 1/4 tsp salt
  • Date water as needed

Method
 

  1. Preheat oven 350 degrees.
  2. Soak the dates in boiling water for 10-15 minutes and then puree
  3. Blend all wet ingredients except date after
  4. Mix all dry ingredients
  5. Pour wet ingredients into dry ingredients and mix just enough
  6. Add date water if mixture is too thick.
  7. Pour into donut pans.
  8. Bake 12-15 minutes until knife slides thru clean
  9. Yields a dozen donuts.
  10. Toppings:
  11. Let donuts cool slightly then dip in apple juice and roll into sugar / cinnamon mixture.
  12. Top with chopped pecans.
  13. *Texture will be dense but oat flour makes this bouncy in texture. Whole wheat pastry flour will make the texture more fluffy-like.
