Sweet Home Peach Cobbler 

No plant-based Southerner kitchen is complete without a good peach cobbler recipe. This one is an oil-free, cozy cobbler made with fresh peaches, maply syrup and whole grains - Southern comfort food that is wholesome and healthy. Quick note: Maple syrup amount in the cobbler doesn't make it very sweet, so adjust to taste.

Ingredients
  

Peaches
  • 6 peaches sliced
  • 1 Tbsp cinnamon more if desired
Cobbler
  • 1 1/2 cup whole wheat pastry flour sifted
  • 1/2 cup oat flour
  • 1/2 cup maple syrup
  • 1 tsp cinnamon
  • 1 Tbsp baking powder
  • 1/4 tsp baking soda
  • 3/4 tsp salt

Method
 

Peaches
  1. Coat peaches with cinnamon.
  2. Saute until soft.
  3. Pour peaches in pie pan.
  4. Dollop cobbler on top.
  5. Bake 350 for 40 minutes.

  7. Whisk dry ingredients.
  8. Mix wet ingredients.
  9. Pour wet into dry and mix until dry is wet (don't over mix).

Notes

A yummy banana nice cream pairs well. Just blend up a frozen banana with 1/2 tsp of vanilla extract and scoop on the plate.
